DeerWhisperer...... Sage like rosemary can be over powering if too much is used and when freezing it can even get more so.
I live in the rural countryside and most small independant grocery and meat markets arehappy to grind up some pork into burger. They even can supply you their own spice mixtures for sausage. I would reccomend asking at your local markets.
