I think that there are certain variables that will alter the flavor of meat that you have. I beleive that the sex of an animal will contribute to the quality. But there are other atributes that occur also.
1. The younger the animal the better quality meat you will have.
2. I believe that a young un bread female animal will have better flavor than a older bred female or male animal due to quality marbleing and less activity.
3. A doe that has calved 2 or three times will definatly reflect the births in her quality because of the stress of birth.
So, over all there are many factors that determine the quality of harvest. If you want to take it one step more then you must consider animal conditioning, and that is a lenghtly subject in its self.
