RE: Breasting out birds....
I tryed that
Didn't like the results of a destroyed bird every now and then
I skin the whole bird
Take the breast
Then the leg/ thigh
Split down the back and gutt , cut into 2 pieces
Wrap and freeze
When I have 15 or so ducks , I cook the carcases in a big stock with vegi's
I then remove the meat from the bones
I now have meat and stock
Barley duck stew is in the crock pot waiting for me to get home tonight
