Check out West Point Military - if you have a doe tag for area 3P you can hunt on the military property. You must take a doe first and then they will issue you a buck tag.

Minniwaska State Part near New Paltz allows deer hunting only. It is located in the antler restriction section.
Sterling Forest State park allows hunting but you need to apply for a free access pass before the season starts.
