The reason why Mathews cams are not adjustable is b/c it performs best at that specific setting. I know I shoot a 28/60, so the cam that comes setup for that outperforms one that can be adjusted to my settings. I'm done growing, my settings won't change during the life of my bow, so adjustments are worthless in most cases.

Grip sizes are personal...everyone's hands are different. Can't blame a company for that.
