Most deer mannikins do not have pre-installed eyes, however a few of them do, mainly the Rinehart line. Just order a pair of nice white banded eyes ( Brad Eppley Tru-Eyes for example), in the size that fits your mannikin ( most are 30mm-32mm). Also order a pair of ear liners ( usually medium) in either forward or back depending on how you want the ears to look.
