First thig you need to do is find out what kind of noise and how loud it is that is alerting the deer in the first place. Often times it's not how loud the noise is, but what kind of noise. Do what you have to do to get the bow as quiet as possible. Look mostly at the accessories on the bow. Plastic is a no-no.
As to where I aim? Right where I want the arrow to ihit with a 20 yard pin. With such a large vital (8") I'm not too concerned about being an inch or two high. Still end up with a low exit hole which is what I want.
