My 2 cents:

I use field dressing gloves, and use a couple of pairs though the operation. http://www.outdoorsuperstore.com/product.asp?prod=278377 I buy them in bulk and make my own packets. You should do it once without the gloves for the experience, but the gloves save a lot of cleanup.

I split the rib cage to get better access, and the pelvic because I always have trouble with the ass!!
