I noticed in your photo you've got a piece of wood(?) spreading the rib cage....why is that?
Thats to help cool the animal off, for instance if its a lil warm out and it may take a while to get it out or we have a long drive back, we put a piece of wood in there to help keep the chest open to allow the cooler air to get inside the animal and help cool the animal down, cause the sooner the meat gets cool the sooner you slow or stop the meat from goin bad.
