I like 30-06 for big gamebased on the versitility. I can hunt anything from moose to deer, just by changing the ammo I'm using. There are some lower end combos out there, ie Sav. 111FCXP3& Rem 710,both come with 3x9 scopes. But I recommend going forsomething a little moreexpensive to ensure your staring on the right foot. Rem 700 is always a good choice.
As for shotguns, I have the Rem 870 Express Super Mag. Awesome gun and very versitile. It shoots anything from light duty 2 3/4" to heavy duty 3 1/2". You can also get a fully rifled barrel to shoot slugs.
