Your shot placement really depends on how the bird is facing and where your angle is , if your in a treestand for example your shot should be in the center of the birds back inbetween the wings.
Looking at the pictures below will give an idea on where to aim no matter what angle your shooting from , if hunting from the ground go for the broadside shot if possiable.





The only way I would go for a head shot with a bow as if the bird had it's neck streched out and if it was very close within twenty yards , trying to decapitate a turkey with a boardhead is very hard.
