One last hint I have is that if it's a buck, to take the front two legs and put them behing the rack of the deer - makes the job much easier (if it's a doe you can accomplish the same thing by having someone hold the front two legs). And be careful not to cut yourself with the knife or any sharp broken bones in the carcus.
