Mrfishy- i would first look at the ingredient label and see what the first couple ingredients are I would think one will be salt. Taste the marinade. then decide what you think you want the flavor to be, and add that ingredient. let me know if i can help further.

Secondly, if your dehydrator is not drying evenly then there could be a couple of problems-

1 product not cut evenly. take your time and try to make all pieces the same length and thickness.

2- too much on the trays - place less on the trays and make more batches. this will also effect the top drying trays by not allowing the air to the top
