They will eat it once the corn ears mature. They just don't prefer the stalk, as corn is a form of grass and deer cannot digest grass well. Also the corn grain is a carbohydrate (sugar) which is mostly needed later in the season for energy (heat). Right now they are needing protien to build mass. Just about the time you notice they start hitting the corn the farmer will harvest it.
