Default draw weight

i want to max out my draw weight...just to see how i like it. im shooting 60-70lb limbs on my Reflex highlander. i went down to 60ish before and didnt like it. this may sound weird but i seemed less steady holding back less tension. yes...easier to draw and hold back...but i shot better at 67-68. i dont feel like im drawing too much weight at 67-68..i draw straight back and can hold it a good while. im a bigger guy and not just trying to be a muscle man...just wondering if theres a "proper" way to max out my draw weight...or do i just crank till they dont crank no more?? i cranked about 3/4 of a turn on each bolt this evening and got the limbs just a hair from the riser...didnt wanna go so far as to have them touch...didnt know if that was safe or whatever...id like to max it out and work my way down till i feel most comfortable and my bow shoots best with the new arrows...the guy at the shop says i need to be at 70 or so because my arrows are a bit stiff...so we will see...
