Shooting a muzzleloader accurately at the 200 to 225 range is going to take a LOT of practice!
I also have a T/C Omega and a pair of Encore Pro Hunters for hunting here in Illinois and they all seem to like the 250 gr Shockwaves as good or better than any other bullet I've tried thus far. As mentioned above, try 130-150 grains if your using pellets or 100-120 if you're using loose powder.
Your optics choice is pretty much wide open butI'll mentioned afew to seriously consider. On my muzzleloaders I use a Swarovski 3-10x42, a Nikon Monarch UCC 2-7x32 and a Nikon Omega 3-9x40. I honestly believe that the Nikon Omega scope is one of the best buys in the industry. The glass is of much higher quality than I expected to find and the BDC retricle makes the longer range game a pleasure to play!
