Deer don't always react to the shot, so it doesn't make a bit of sense to set your pin to be aiming low. Set your pin for where you want the arrow to hit and always aim for the heart. Then if the deer doesn't drop, you'll center punch the heart. If it does drop, you'll get lungs.

And if you happen to miss low, the deer will most likely live.
