It's called jumping the string and no I don't set pins low to compensate for it. Just before a deer hauls butt he'll crouch to get set to run-this is commonly referred to as jumping the string. What I do is watch the deer's body language. You'll be able to tell if the deer is nervous or alerted or if he is relaxed. Sometimes you have to wait or pass up a shot if the animal is in "high alert". If the deer is relaxed,he won't react quick enough to jump the string.
