Recipe for 1 good sized northern (multiply for more):
Cut up fillets
Soak fish for 24 hours in salt water (strong enough to float a raw egg)
Drain, do not rinse
Cover fish with White vinegar for 24 hours

Make brine:
Boil for 3 minutes and cool:
2 cups white vinegar
3/4 cup White sugar
1 cup water
1 Tablespoon pickling spice
Then add 3/4 cup white port wine.
Layer fish in large glass jar (Mason or Ball)with onions(vidalia)/fish/onions/fish till jar near full. Put lid on
Store in fridge minimum 10 days before eating.
Don't even need to worry about bones.
