There are several documented cases of this in Wyoming over downed elk. Not sure I'd pull a gun on someone trying to steal my elk but I sure would on someone trying to steal my vehicle or other parts of my personal property. Crime does happen even in the woods, especially in campgrounds in National Forests. A friend of mine had $5000 worth of flyfishing equipment taken from his vehicle while camped at a trail head in Wyoming "wilderness". My uncle actually used his handgun to stop a sexual assualt at a campground in Colorado. The perps were convicted of attempted rape and my uncle recieved a big fat ticket for some sort of weapons violation. Now there's gratitude for you.
