Been in the same boat, only guns that fit my wife off the shelf are the youth models and at the time I bought her her rifle .243 was the only good choice. I haven't seen any youth rifles in larger calibers so I'm assuming it hasn't changed and recommend the .243 to you too. Now if the manufacturers get smart they'd chamber a youth rifle in 7mm-08.
