Hey Syd, welcome aboard! I've only tried baiting twice, both times unsuccessful, so I'm pretty sure I'm not the most qualified to answer this question for you.
From what I've learned though, through my mistakes or through what I've learned on the boards, is when they do start coming in, to keep quantiful food for them so they keep their interest peaked for that site. If they start coming in later though, after dark, I've been told to cut back on the amount of food, and that sometimes gets them to come in earlier.
We found cob and cheap dog food can be bought very cheap, and I've heard that bears will devour that. If you can't scrounge up enought kitchen and meat scraps, that could be used as a filler for more quantity of food.
