What you need to do is get the venison ground up, like ground beef, once you have that done. You can go to walmart and buy the casings and the seasoning mix, and the stuffer tube, once you get the seasoning, mix the ground vension with ground pork, not sausage, but ground pork, mix the vension, the pork and seasoning and let sit to let the spices work their way into the meat. once you've let it set, stuff the casings, and either smoke then or you can cook them in your oven, at 150 degrees for 7 hours.
