Shoulder shots are not recommended Quilly although today's bows do have enough power to pass through. Too many variables with this shot. As Taz said, stick to the boiler room. A pass through in this area usually results in a good blood trail as well as a short travel distance. If my shot is good, I usually see the deer go down. I then wait 15 min or so. If the deer runs out of sight, I'll wait 30 more min. If your shot is from the liver back I like to wait an hour or more. Gut shot deer should be left alone as long as possible. An hours time will have a gut shot deer bedded and still alert. If you jump the deer, 9 out 10 times it will be lost. Your arrow will tell you how long to wait.
