I second the pan fry in olive oil... it is extremely simple and delicious. You can put as many or as few seasonings as you want, but like he said dont overcook it. Another easy awesome recipe is to cut the meat into small strips or chunks and deepfat fry them in flour or shorelunch or whatever you favorite breading is. This is an amazing way to eat pheasant!
