"Wild Turkey and Dressing"
most people just breast out a turkey and trash the rest of the bird.
BIG mistake, for two reasons, a waste of good turkey meat ,and you miss some good eating.
Take your bird,skin,remove the breast(save to fry later).cut legs,wings,backbone,neck , and whats left of the breastbones into smaller chunks.put in crock pot with about 8 cups water ,a large onion,couple carrots,salt and pepper.let cook overnight.in the morning strain the juice off (SAVE THIS JUICE ).the meat will fall off the bones,chop the meat.set aside.
cook 3 cups rice with 6 cups of the broth you saved;set aside.
take 1 can cream of mushroom soup, 1 can of cream of chicken soup, add 1/2 cup of brouth you saved, warm till liquidfied,add salt and pepper.
Boil 6 eggs,chop, 1 large onion chopped.
mix well in large bowl rice,soup mixture,eggs,onion,turkey meat , put in large pyrex baking disk,add rest of broth.bake at 350 to 375 for 30 to 35 min. or until onions are done and the dressing is as dry as you like your dressing.
slice and season the breast with salt,pepper,garlic powder,lowyers seasoning, flour lightly.fry till just done.
a few cat head biscuts,sweet ice tea,maybe cranberry sauce.
make sure you have a full day to rest after you eat,it's dangerous to move around when so full.
