Turkey Chile Verde!!!!
Giving amounts in chile recipes is for wimps, if you like a certain flavor add more,if not add less!
Ground turkey meat lightly browned
Saute' onions,jalapeno peppers, celery and garlic
Add canned chopped chiles(green) and chicken stock (turkey if you got it)
Spices: cumin (add some in the beginning and some at end) a little oregano and thyme. A lot of cilantro. Simmer until cooked (about 30min)
Add a can or two of white beans (drained and rinsed) and your reserved turkey meat, simmer for 20min.
When serving add more cilantro and choppes green onions, salt to taste

Don't simmer too long. The trick is not to cook the turkey too long in the soup

Oh yeah and for breakfast heat some up in a skillet, crack a few eggs on top and cover until eggs are done.
