A plaque behing the mount it always optional just ask for one if you'd like. If not, your mount will not come with one. A standard shoulder mount it just the deer not the board. As far as the turn, a deer form is always named by the direction of it's turn. So if your deer is turned to the Right then it's called a Right Turn. However, to confuse the matter, you must decide wether you would like the head to be upright, semi-sneak, full sneak, etc. Many different forms to choose from. Try a taxidermy site like McKenzie for a great smaple of photos of differnet styles.

For the record though, the semi-sneak seems to be the most popular with it's head slightly lower in a more natural position. My personal fav is the Wall Pedastal mount that actually shows more of the shoulder and cape of the animal.
