I think wind helps hunters more than anything else. Everything is moving...moves the decoys more...and a steady wind makes you know exactly where they birds are going to need to come from.
With ducks...they hate flying (but espeically sitting) in wind. Find a nice little pocket on the leeward side of an island or marsh tree island and you can flat whack'em. They loved to sit in those little protected areas. Also, when they start to swing downwind, you can usually give a little comeback call and they will hook right in...no turning back!
As far as how high they fly...I think they fly higher on calm days..fly more often too. Nothing tougher than a dead calm day.
