Wild hogs don't eat the same feed that farm hogs do , farm hogs are fed to gain the maximum weight in the shortest time , wild pigs have to find their own food , which is usually far less fattening than commercially produced feed . Any recipe that you would normally use for pork from the store will generally work with the wild variety , but you have to make sure to use a higher moisture cooking method than you would for store bought pork since the meat is leaner . Much the same way that you would prepare venison and beef differently . I like to use an injector to add moisture/fat to lean meats , and slow cooking in a covered vessel also helps to preserve moisture . Nearly any meat benefits from a liberal injection of Tony Chachere's Creole Butter marinade , it also helps keep the meat moist and tasty . Just injecting plain old melted real unsalted butter will help and makes the meat flavorful , and you can simmer the seasoning of your choice in it before straining and injecting it into the meat . Always make sure to cook your wild piggy to well done to avoid problems with trichinosis and other nasties .
