good topic buck. im curious to see responses on this. let me add to this. doesnt beef taste better? or is venision an aquired tast. here is how i break down my harvest. steaks, ground and tender loins. I BBQ the tenderloins, make jerkey from the steaks and chili with the ground. mabye i just a poor excuse for a cook, or just dont have the know how, but I just cant get the game tast out of the meat to make a good roast or stew. although, i can make a beef stew or roast a piece of beef that will knock your socks off.
