I've done enough deer.........and seen other people do plenty more to know better. A good friend of mine has been a professional meat cutter for over 20 years and butchers deer for extra money during the season. He is happy if his crew does a deer in 30-40 minutes........and they have 3-4 guys going at once.
perhaps, your friend should find another way to make a living. $40/deer/4 guys * .66 hour = $6.60/hour. I think he's loosing money.

Your math is WAY off.

First of all he charges $75 for a straight cut..........more for anything out of the norm of steaks, chops and grind. At 40 minutes/deer that is 3 deer every 2 hours for a total of $112.5 an hour divided 4 ways is just over $28/hr. He does not divide it equally either since the equipment is all his.
Who would pay $75 to butcher a deer? I guess the one who keeps the quote "A fool and his money is soon seperated" live and well.
