This is so simple, but soooo good.
Cut the backstraps into 1 1/2" filets.
Wash them
Wrap the edge with bacan and secure with a toothpick
Salt and Pepper or use your favorite seasonings
Get your pan very hot
Sear both sides for about a minute on each side
Place in oven for 10-12 min @ 325
Now them sum tasty viddles
