Great post CC!!!!

I hang mine till the meat is cool perferably. I however do hunts where shooting game and caring for it takes on a hole new meaning. Case in point my sheep this year was hung for 11 days. Constant rain threatened to ruin my meat. Constant bear enounters threatened to take my meat...all in all its still the finest eating meat I have ever ate and lost one game bag empty, and one piece out of another bag the size of a grapefruit.

I hang my moose enough to get it cool, thats it! From there its to the butchering table. More so with caribou, sheep, etc etc....
