RE: Deer meat gone bad?
Being a formerbutcher I can tell you I have smelt some presty nasty meat. We used the meat pakings like you used and have never once had any meat go bad simply by sitting inside these bags. The only time it would go bad is if it was thawed at one point or another. The discolorization is nothing to worry about. This is common for older venison and beef. What you may be smelling is blood in the meat that got freezer burnt. The bags do not let odors escape. One way to check your meat out is to fry up a small portion of it, if the smell goes away it shoudl be safe to eat, buyt if it stinks even while frying it, I would discard the meat or give it to a hunter who has hunting dogs.
