Preferably, you are supposed to wait until the first good freeze. It is a custom that my family always followed. I think that the logic is that the first cold snap will kill a lot of the parasites on rabbits, but I'm not sure. Dunno if that really matters since a lot of states have rabbit seasons that start well before any cold spells.
