I wasn't actually referring to a pup becoming hardmouthed from catching birds. I use dead and wing-clipped birds to generate interest in pups all the time. I was merely remebering how difficult it can be to get a pup that has a ton of pointing instinct to actually point and hold birds after it realizes it can catch them. This can take months to undo.
