when I was trapping, I always keep the young smaller ones for myself.
BBQ ; like pork and there great.
take the young ones and clean real good(remove the gland from under the front legs) season,meat tenderizer, lowyers seasoning , garlic powder , put into bag with 1 cup zesty Italian dressing,seal and let set overnight..
cook real slow on grill, (just like you would a pork sholder).
taste sorta like pork.
if it is a big one,then put into pressure cooker for about 1 hr. then season as above, then cook.
