I've been using a basic fillet knife that I purchased cheap from Walmart. Works just fine. As a backup, I use another fillet knife that came with out kitchen knive set. I'd love to get that Gerber butchering set though and keep it for just game.

Like TrapperDave, I too avoid cutting through bone.
