Finger release, or mechanical?
Has the bow been "set-up"? Centerline, knock set, that kind of thing. Both cam's in tune? All can contribute, since you're sure the fletchings are not hitting anything upon release.

And oh yeah . . . It's O.K. to shoot outdoors in the wind, you just need to stand closer! (lol)
