I honestly don't know Reb. We soak them in butter milk over night. Seriously ..they firm up like bass and taste like red fish. Otherwise their flesh has a mushy texture. I caught 2 meals of them. I put them in 2 lb bags. of fillets.
Cause they eat all the crap and sewageon the buttom!






Hence the word Crappie!
Filet? Man, you scale, gut, hose down, batter and fry crisp!

I even eat the crispy fried tails!
