I freeze everything and when I am ready to make sausage for example, I then take out the venison, thaw it, mix with pork and spices, make my sausage(Italian or garlic)and then back in the freezer. Works for me.
I also do it this way, as do alot of commercial sausage makers.

But I would unthaw in the refridgerator not with water.
