too hot here in florida to hang a deer (outside of a walk in cooler). even if you could, the green blow flies would have their way with it. i field dress, skin and quarter it up. i then place the meat in a large clean ice chest where i dump 30 pounds of ice on it and close the lid. leave the drain plug out of the ice chest so as the ice melts and mixes with the draining blood, it will not soak back into the meat. also, check the level of ice atleast once a day and add more if needed. like someone said before, if left on ice, the meat will be fine for up to 7 days.
