Default safe to unthaw and re-freeze?

Hello

I have a quick question about unthawing venison. This is my first time both hunting and preparing deer meat. The processing that did my doe packed my ground meat in bags then wrapped them in freezer paper, after I got the meat I did not have time to re-bag it and get it all ready for storage, so I just put them in my freezer and forgot about them. Today I got 2 pounds of ground beef and decided to unthaw 2 pounds of deer meat and mix both up.

I used cold water to unthaw the deer meat then I hand-mixed both meats for 20 minutes. My question is, will unthawing the meat and mix it up then re-freezing pose chance of making the meat spoil? What I am hoping is that since I used cold water to unthaw, that cause of that it does not allow for the meat to go bad. Like I mention before, this is my first hunting year and my first time dealing with venison so I am still learning.


Also here is a recipe for some delicious deer chops I made the day after my first hunt.


2 tablespoons of minced sweet onion
ΒΌ cup of chopped sweet onion
1 tablespoon of minced garlic
4 tablespoons of Worcestershire sauce
2 tablespoons of soy sauce
6 venison chops about 3 to 4 inches in diameter
Enough beef broth to cover the meat
MRS. Dash garlic & herbs seasoning
4 tablespoons olive oil.

Mix the Worcestershire sauce, soy sauce, beef broth, garlic and venison in a bowl, make sure you have enough marinade to cover all the meat. After you mix everything up use a fork and poke the meat real good this will tenderize and allow for the marinade to sink in. I usually let the meat marinate over night. During that time I make sure you keep poking the meat with a fork. Take the marinade and put it in the fridge overnight,(usually I can marinate the meat for 6 hours and I get the same results but for more taste overnight is the perfect time.)

Heat up a skillet and add oil. Before putting in the meat I pad it with a dry paper tower and add some Mrs. Dash on both side of the chop I fry the meat and the minced onions at the same time on Hi heat for 3 to 4 minutes I turn the heat to medium and add the chopped onion and 4 tablespoons of the marinade. I simmer for 3 minutes.


I use that same marinade for my ground meat I find it kills some of the game taste I the meat. I had my wife eating venison with this marinade in no time, (which is a miracle she hated the taste of venison before she tried it my way.) Enjoy !!!!
