Give each a call and check on their level of service & prices.
Search words - Butcher, Meat Processor, Meat Packing
Using those you should find what you are looking for.
Heck - if I can find a bunch of butchers that will process deer in the Chicago suburbs, I'm sure that you'll find a few in Reno, NV.
