I do think deer...especially older bucks, will go almost completely 100% nocturnal if pressured too much.

I do not believe you can tell the sex of a deer by the clumping or non-clumping of it's feces. I think for the most part the big log-type terds are from bucks but I think bucks can let the pebbles fall out of their arse one by one also. I think it mostly depends on diet.

I looked an 8 point buck in the eyes for over 30 minutes on Sunday morning at distances of 5 yards out to 20 yards. He used every sense possible to figure out what I was...he smelled me, stared at me, listened to me, and everything but climb up the stand and lick me to see what I tasted like. I just continued to stare at him. He eventually began feeding again until he meandered out of sight. I don't think I would have had the same luck had he been a mature buck...at the first wiff of me he would have been gone, but young bucks are young, dumb, and inexperienced.
