for people that like gizzards , the coot has the largest in any bird.a coots gizzard is bigger than any turkey.
take a bunch and pan fry them and chow down.
I like to run gizzards through the pressure cooker for at least 45 minutes first , then bread and fry as usual . They come out a lot less chewy that way .
we do the same,my old teeth ain't what they use to be.
