It's been a long time since I ate turtle, butI remeber as a kid back in the '70's we use to got visit an uncle of mine in Edinburg Texas, he lived out in the stix ,their was orange groves and all kinds of vegetable fields all around.We use to fish the irrigation canals for big catfish and we would oftencatch huge softshell turtles at least 24" in diameter. If my memory serves me right I think we would just gouge out the legs and neck with a knife , skin and batter up and fry. I thought they tasted exactly like frog legs, the meat even looked the same. But it's been a long time.
