I dont know why, but for me it just wouldent quite seem right to hunt bison with a bolt action, probably too many westerns I guess. My first choice for such a hunt would be a Sharps Replica in 45-110, BP loads of course. Now it you simply must go modern, I'd go with the .300H&H. Good luck with the hunt.
Sharps Shiloh in Big Timber Montana is a place to visit.....love it there. They make that gun in 45-110 as suggested and you're absolutely right...it's the gn to use. Sadly they're about $2,500 and take a long time to get.....I am short the cash and the time.....but it's an ideal thought.
