I have done some research and this is what I came up with. I'm going with a custom made knife by a gentlemen in Mississippi by the name of Gene Ingram. He hand makes all of his knives. I put in an order today (June 16th) and he said I should have it by the end of October. Here's a link to his knives. He uses G2 tool steel, which isn't stainless, but hold's an edge longer because it is harder than most stainless. There is still a high Chromium content in it, so it is nearly stainless.
